Muffins anyone?

Oatmeal Breakfast Cookies

3 cups rolled oats
1 cup whole wheat flour
1/2 cup ground flax seeds
1/3 cup powdered eggs
2 tsp baking powder
1 tsp baking soda
2 tsp Spice Blend mix
1/2 tsp salt
2 cups applesauce
1 cup raisins and/or chocolate chips
1/2 cup coconut oil
1/2 cup Xagave
3 Tbsp water
2 Tbsp orange juice concentrate
1 tsp vanilla


Mix together dry ingredients.  Stir in wet ingredients.  Let sit for 10 minutes while heating oven to 350 degrees.  The flax will soften with the liquids and hold the cookie together.  The cookies do not raise much, so press them down a bit to cook evenly.  Bake for 10-15 minutes.  Makes about 36-40 cookies.

NOTE:  Good additions - Diced apples, shredded carrots, coconut, walnuts or pecans.

Orange French Toast

3 eggs
1/2 cup milk
1/2 cup orange juice
1 Tbsp Xagave
1 tsp grated orange peel
1/4 tsp cinnamon
1/8 tsp nutmeg
Dash salt


Beat together eggs, add milk, orange juice, Xagave, orange peel, cinnamon, nutmeg, and salt.  Heat griddle over medium heat, lightly grease with butter.  Dip bread into batter. Place dipped bread onto heated griddle.  Cook until golden on both sides.  Serve with maple syrup.

Oatmeal Pancakes

1 cup Oatmeal Pancake Mix
3/4 to 1 cup water
2-3 Tbsp chopped nuts


Lightly oil griddle and heat to about 350 degrees. Spoon about 1/4 cup batter onto heated griddle and cook until bubbly and edges look dry. Turn pancake over and cook until lightly browned.  Serve with maple syrup or fruit sauce.

Basic Buttermilk Pancakes

2 cups Basic Buttermilk Pancake Mix 
1 cup water

In a medium bowl, combine mix and water.  Stir with wire whisk until blended.  Let stand 5 minutes.  Stir in additional water for a thinner batter.  Preheat lightly oiled griddle.  Pour about ⅓ cup batter onto hot griddle to make 1 pancake.  Cook until edge is dry and bubbles form on top.  Turn with a wide spatula.  Cook until browned on both sides.  Makes about ten 4" pancakes.

Variations 

Apple Spice:  Add 2 tsp Basic Spice Blend and 1/4 cup dried apple to Basic Buttermilk Pancake Mix before adding water.

Blueberry:  Add 1/4 cup dried blueberries to Basic Buttermilk Pancake Mix before adding water.

Cranberry:  Add 1/4 cup dried cranberries to Basic Buttermilk Pancake Mix before adding water.

Chocolate Chip:  Add 1/4 cup mini chocolate chips to Basic Buttermilk Pancake Mix before adding water.

Granola

4-1/2 cups rolled oats
3/4 cup shelled sunflower seeds
1/2 cup flaxseed
3/4 cup sliced almonds
3/4 cup slivered almonds
3/4 cup chopped pecans
2 Tbsp cinnamon
1-1/4 cup pure maple syrup
3 Tbsp coconut oil, melted
1 cup coconut chips


Place rack in center of oven; preheat oven to 325E.  Combine oats, sunflower seeds, flaxseed, nuts, and cinnamon.  Add maple syrup and oil and stir well to thoroughly combine.  Spread on cookie sheet and bake about 20 minutes.  Stir and return to oven for about 15 minutes or until golden brown.  Burns easily -- watch closely and stir if needed.  Remove from oven;  immediately stir in coconut chips.  When cool, place in airtight container.  Will store 1 month in cupboard or 6 months in freezer. Thaws quickly.

NOTE:  Do not add dried fruits before baking.  They will become very CRUNCHY.   I like to add dried fruits to my bowl when eating. That way I can change the fruit whenever I want.

NOTE: This granola is also delicious when cooked as a hot cereal.  We sometimes mix half granola and half 6-grain cereal. Add some dried fruits and milk and it will hold you until lunchtime.

Brown Rice Heaven

1 cup quinoa (black, red or white)
2 cups sweet brown rice
5-1/2 cups of water
1 tsp salt
Coconut oil
Xagave
Dried fruit and nuts

Turn on pressure cooker.  Add grains, water, and salt.  Cook on high pressure for 12 minutes.  Let pressure drop, open and add coconut oil and Xagave to taste.  Serve sprinkled with dried fruits and nuts or fresh raspberries, peaches, or strawberries and cream or milk.

Mixed Cereals

6 cups water
1 cup rolled oats
1 cup pearl barley
1 cup cracked wheat
1/2 cup brown sugar
1 tsp salt

Place in crockpot and cook on low for 5 hours.  Serve with nuts and fruits of your choice mixed in.  

Save the leftovers for tomorrow.  Very nutritious and delicious.

Oat Groat Cereal

2 cups whole oat groats 
3-1/2 cups water 
Pinch of salt 
1 cup chopped walnuts 
1/4 to 1/2 cup Xagave, to taste
1 Tbsp coconut oil 
1/2 tsp nutmeg,

In a pressure cooker on Brown put in the whole oat groats to toast for about 3-4 minutes.  Be careful not to burn them.  Add in the water and salt.  Place lid on pot, with low heat under it.  Cook on high pressure for 6 minutes.  Once cooked stir in the walnuts, Xagave, coconut oil, and nutmeg.  Serve with fresh or dried fruit.
